Texas Caviar

Ingredients

Threadgill’s Texas Caviar
2 Qts Canned Black eyed peas, drained
½ Cup Green Bell Pepper
2 Tsp Garlic Minced
1 Cup Yellow Onion
1 Cup Red Onion
1 Cup Vinegar & Oil Dressing
1 Tbsp. Vegetable Seasoning
Mix all ingredients well and marinate 8 to 12 hours, stirring a few times to coat all ingredients well. Makes 2.5 Qts.

Vinegar & Oil
1 1/3 Cup Red Wine Vinegar
½ Tsp Dry Mustard
½ Tsp Sugar
1 Tsp Black Pepper
½ Tsp White Pepper
½ Tsp Salt
1 Tbs. Parsley, minced
3 to 4 Cups Canola Oil
Mix the dry ingredients with vinegar. Add minced parsley and garlic and blend in the oil. Refrigerate.

Vegetable Seasoning
1 Cup Salt
2 Tbsp Black Pepper
6 Tbsp White Pepper
4 Tbsp Cayenne Pepper
2 Tbsp Granulated onion
4 Tbsp dry granulated garlic
2 Tbsp Dry mustard
Mix Ingredients well. Store in glass jar or plastic container. Shake before each use.
