Boiled Steamed Eggs
4 to 8 eggs
I use a spaghetti pot. You can use a steam basket too.
I put about an inch of water in the bottom of the pot or just about 1/4 inch shy of the bottom of the steamer. Bring the water to a boil. Reduce heat to medium low. Place eggs in the steamer basket and cover. Cook for 13 minutes. A minute or two longer if the eggs are cold.
Prepare an ice bath in a food container with a lid.
Once eggs are done, use tongs to place eggs in the ice bath. Let sit for 15 minutes.
Pour out half of the water, and close the lid. Shake for 39 shakes.
Remove lid and see how easily the shells come off!
