Stuffed French Loaf
1/2 Cup Coarsely chopped Onion
1/2 Cup Coarsely Chopped Bell pepper
2 Tbsp. Butter
1 lb Can drained diced tomatoes
15 inch loaf of French Bread
5 Eggs well beaten
1/2 Tsp Salt
1 Cup soft bread crumbs (taken from cut out loaf)
3/4 Cup cubed ham or other cooked meat in 1/2 inch size
1/2 Cup grated cheddar cheese
Instructions
Saute the onions and bell peppers in butter for about 5 – 7 minutes over med low heat until onions are translucent.
Add the tomatoes and heat for about 3 minutes. Let cook for a couple minutes and pour into hollowed out bread loaf.
Combine beaten eggs, salt, bread crumbs, and meat and pour ontop of veggies in the loaf.
Top with shredded cheese.
Bake for 25 – 30 minutes until set in a 350 degree oven.
