Plum Streusel Slices
1 1/3 Cups Plums, pitted and chopped
1 Tbsp. Lemon Juice
¼ Cup Sugar
½ Cup Butter-softened
¼ Cup Sugar
1 Egg Yolk
1 ¼ Cups All Purpose Flour
Topping
1 ¼ Cups All Purpose Flour
½ Tsp Baking Powder
6 Tbsp Butter-chilled
¼ Cup Light Brown Sugar
½ Cup Chopped Hazelnuts (Filberts)
Preheat the oven to 350°F. Grease and line with parchment, the bottom of an 8-inch square cake pan. Put the plums and lemon juice in a small pan and cook over low heat for 5 minutes, until soft.
Add the sugar to the pan and cook gently until dissolved. Simmer for 3 – 4 minutes, until very thick, stirring occasionally. Let Cool.
Beat the butter into the other ¼ Cup sugar in a bowl until light and fluffy. Beat in the egg yolk, then mix in the flour to make a soft dough. Press the mixture into the bottom of the prepared cake pan. Bake for 15 minutes. Remove from the oven and spoon the cooked plums on the cake.
Meanwhile, to make the topping sift the flour and baking powder into a bowl. Rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and chopped nuts.
Sprinkle the topping mixture on the plums and press it down gently. Return the pan to the oven and bake for another 30 minutes or until the topping is lightly browned. Let cool for 15 minutes, then cut into slices. Remove from the pan when completely cold.
